Flora Plant Kitchen in Miami Makes Veggie Dining Irresistible

· · · · ·

At Flora Plant Kitchen, located in Miami’s Morningside neighborhood, there’s no meat on the menu—and no pressure to go full vegan either. Founder Marnie Gelhard created the space to feel relaxed, inviting, and full of flavor, whether you’re a lifelong vegetarian or just veggie-curious.

“We’re not here to convert anyone,” Gelhard says. “But if someone walks away feeling full and surprised they didn’t miss the meat—that’s a win.”

Since opening in late 2023, Flora has attracted diners with its bold flavors, laid-back atmosphere, and an underlying mission: if everyone eats one vegetarian meal a week, it could have a big environmental impact.

From Travel Dreams to a Morningside Oasis

The restaurant’s story began in 2019, when Marnie and her husband David were traveling through Mexico and Colombia, dreaming of starting their own place. Back in Miami, they found a charming spot and began building their vision during the pandemic.

Marnie, a trained graphic designer, handled branding, furniture design, and even drew the logo herself—all while pregnant. The result? A tranquil, dog-friendly patio with wood furniture carved in Bali and a vibe that says “come as you are.”

Meaty Flavors, Minus the Meat

At just 26, Chef Fabio Delgado has crafted a menu that mixes French technique with Cuban and Colombian ingredients. Standouts include:

  • A smoky charcoal-grilled mushroom rice bowl with house chimichurri
  • A veggie tartare that replicates the crunch of chicharrón using fried yucca and mushrooms
  • A messy, delicious take on Mexican street corn with guava aioli

Dinner brings extra flair with tableside sauces and truffle shavings, all served on beautiful Colombian-made ceramics.

Flora is more than a restaurant—it’s a reminder that plant-based dining can be playful, cozy, and deeply satisfying.
